Ingredients

.1 cup (90g) rolled oats

.1 medium ripe banana

.1 large egg

.¾ cup (180ml) milk of choice

.1 tablespoon maple syrup or honey

.1 teaspoon vanilla extract

.1 teaspoon baking powder

.½ teaspoon ground cinnamon

.Pinch of salt

.½ cup (75g) fresh or frozen blueberries

Optional topping:

.1 tablespoon chopped nuts or extra blueberries

Method

1. Preheat oven to 180°C (350°F) and lightly grease a small baking dish or two ramekins.

2. In a blender, combine the oats, banana, egg, milk, maple syrup, vanilla, baking powder, cinnamon, and salt.

3. Blend until smooth and thick, about 30–45 seconds.

4. Pour the batter into the prepared baking dish.

5. Gently fold or sprinkle the blueberries over the batter.

6. Add optional toppings if desired.

7. Bake for 20–25 minutes, until the center is set and the top is lightly golden.

8. Allow to cool for a few minutes before serving.
