    Ingredients

    Method


    1. Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper or lightly grease it.
    2. In a medium bowl, whisk together the oats, flour, cinnamon, baking soda, and salt.
    3. In a separate bowl, whisk together the melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla extract until smooth.
    4. Add the wet ingredients to the dry ingredients and stir until combined.
    5. Fold in the raisins and optional nuts.
    6. Let the mixture rest for 5 minutes so the oats can absorb some moisture.
    7. Scoop tablespoon-sized portions of dough onto the prepared baking tray, spacing them about 5 cm (2 inches) apart. Gently flatten each cookie slightly with the back of a spoon.
    8. Bake for 10–12 minutes, or until:
